There are so many things that can contribute to ‘the morning rush’. Getting everyone dressed and ready, making sure teeth are brushed and homework is not forgotten, with kids in the house the list can just go on and on. Fret not! Last night I looked for some ideas on how to make sure that everyone got a good b-fast in their bellies without too much hassle, and I managed to find some great ideas! Hope you enjoy!
Muffin Tray Omellettes
So easy, this is one idea that you can truly make your own! Just do your prep the night before (grate cheese, dice tomatoes, pit a few olives, slice some ham or anything else your family would enjoy), divide your ingredients into each space in the muffin tray and cover and store in the fridge till morning. Then, when you get a few minutes in the morning, just crack a few eggs, stir them up good, pour into your muffin tray and pop in the oven at 180 C for 10 -12 minutes. Simple, nutritious and delicious.
Oven-baked French Toast Casserole
This is a super tasty way to go if you’re looking to treat your little ones! A firm favorite for kids (of all ages), this can all be prepped the night before and stuck in the oven in the morning, making for a super delicious brekkie!

Slice the bread into about 10 (2,5 cm-thick) slices.Spread butter evenly over one cut side of each bread slice.Arrange bread, butter side up, in an un-greased baking dish.Whisk together eggs and the rest of the ingredients (except your chosen topping) and pour over the bread, making sure to press the slices down so they soak up all the egg mixture. Cover and store in the fridge until morning. When your family’s almost ready to eat, sprinkle on your toppings and pop in the oven. Bake, uncovered, at 180 C for 45 minutes or until golden, sprinkle with powdered sugar or drizzle with maple syrup and serve warm. Enjoy!
A super easy, healthy option! For this great breakfast treat, all you need to do is layer a couple of things into a large glass bowl and store in the fridge till you’re ready to enjoy! Start with a layer of granola or muesli, then add some diced fruit of your choice, then a layer of yogurt. Repeat until your bowl is full, then drizzle with honey and top with some chopped nuts or berries and cover til morning. What could be simpler!
Potato, Bacon and Egg Breakfast Bake
This is a great way to use left over baked or boiled potatoes and a delicious savory option that is super filling too! And if you don’t have time to fry up some bacon, you can easily replace the bacon with simple sliced ham or sausage. All you need to do is slice up some already cooked potato, crumble up the bacon or slice up the ham, grate a little cheese and beat a few eggs. First, lay the potato slices in an oven proof baking dish, adding in the bacon or ham as you go. Top the whole lot with cheese (I like doing this with Feta, but grated gouda or cheddar will work just as well) then cover and refrigerate until morning.When everyone’s almost ready to eat, beat a couple of eggs and pour over your potato mixture, and pop into the oven, Bake at 180 C for 30 minutes, sprinkle with some chopped parsley if you’d like and serve warm. Enjoy!
Super Easy Scrambled Egg Tacos
This is the one recipe this I would recommend doing fresh from scratch in the morning, but is so delicious and fun to eat that I’m sure it will be worth it!
What you’ll need:
- 6 soft tortillas
- 4 large eggs, beaten
- 150 g chorizo (or boerewors 🙂 or any other sausage), removed from the casing
- 100 g chunky cottage cheese (or grated cheddar)
- 1 avocado, diced
- handful of chopped cilantro
What you do:
Fry up the sausage meat, then add in the beaten eggs and scramble gently. Heat up the tortilla in the oven for a few minutes (just to warm through) then top with some of the egg and sausage mixture. Add a spoonful of cottage or grated cheese, top with avocado and cilantro and fold in half. Super simple and super fun to eat! Now the only thing left to worry about is the cleaning up after!
