This has to be my favorite thing to nibble on during movie time… crunchy, salty, sweet, YUMMY!
What you need:
1 packet lightly salted microwave popcorn (or 1 cup normal popcorn)
1 cup of salted pretzel shapes (i used alphabet pretzels)
1 cup of mini animal crackers (or mini sesame stars)
1 cup of honey roasted puffed wheat cereal
1 cup of candy coated ‘choco’ bites or peanuts (like M&M’s)
1/3 cup of crushed nuts (i used hazels, because i had some left from yesterday, but pecans would be great too)
Chicharron (pork scratching/crackling – optional)
And we’re going to keep things nice and simple, and go with a microwave syrup… there’s no need to be checking temperatures with sugar thermometers or doing a soft ball test – this is supposed to be a hassle-free, family movie night snack… this syrup is perfect because it’s so forgiving.
For the caramel syrup:
1/3 cup of butter (no substitutions)
2/3 cup of light brown sugar
1/3 cup of corn syrup
1/4 spoon of baking soda
1/4 spoon of vanilla essence
Step 1 – Melt your butter on high, stirring every few seconds so that it doesn’t splash all over the inside of your microwave. Use quite a big bowl, because your sugar (next step) is going to bubble up quite a bit.
Step 2 – Add in your sugar, give it a stir, then pop it in the microwave for 30 seconds. Watch it closely, and open and stir if it looks like it’s going to bubble over. Add in your corn syrup and repeat the process 2 more times. Repeat the process once more for 90 seconds without stirring.
Step 3 – Remove from microwave and stir in the baking soda and the vanilla essence.
Your caramel should look golden and shiny…
Pour the caramel over your popped popcorn, then stir in your pretzels, crackers, cereal, nuts and candy. Add the chicharron for an extra salty flavor and crunch factor!
