A true braai classic, the t-bone steak even looks like my home continent Africa! This recipe is definitely one for the record books – juicy, and with the perfect fragrant dry rub – i promise, no matter where you’re from… this one’s a winner!
4 tablespoons coarse salt
2 tablespoon brown sugar (optional)
2 tablespoons coriander seeds
1 tablespoon black peppercorns
1 tablespoon paprika or 2 teaspoons paprika
1 teaspoon cayenne pepper (optional – depending on if the kids will let you 😉 )
1 tablespoon garlic flakes or powder
1 tablespoon onion powder
1 tablespoon dried thyme
1 tablespoon dried oregano
6 T-bone steaks, about 1 1/2 inches thick
How to make the magic happen:
First of all, make your spice mix – in a grinder ( or using your mortar and pestle if you prefer), grind all the seasonings and herbs until fine.
Rub your steaks with the braai spice and set aside in refrigerator for 1 to 4 hours. This will ensure that they take on all the flavors nicely. Take them out of the fridge an hour before you want to get cooking, so that the steaks can come back up to room temperature before grilling.
Heat a grill until screaming hot. You want some nice grill marks on your steak when you drop it onto the grill. Place the steaks onto the grill and cook, turning every 2 minutes or so, until they’re crusty on the outside and medium-rare on the inside, 120 to 125 degrees if you’re using a meat thermometer (or a little longer if you prefer your meat more well done). Let them rest for at least 5 minutes, then serve with the sides of your choice.
